They are cooked from dry and are the base for sweet red bean paste, red bean soup, che, mochi and rice cake fillings, as well as savoury dishes and rice cooked with beans.

How to use: Rinse the beans and pick out any grit. Soak for several hours or overnight, then drain and simmer in fresh water until tender, topping up the water as needed. Add sugar only after the beans are soft, since sugar added early keeps the skins firm.
