Can I stir-fry udon instead of making soup?

Yes. Boil the noodles first, drain them well, then stir-fry over high heat with your sauce so they take on flavour without breaking apart.

How do I stop the noodles sticking together?

Use plenty of water, stir during the first minute, and rinse under cool water after draining if you are not serving right away.
