How to cook / Cach nau
Boil the noodles in plenty of water until springy, then drain almost all the water, leaving just a few spoonfuls in the pot. Add the black bean sauce powder or paste and stir over low heat until every strand is glossy and evenly coated. Classic toppings are diced cucumber, fried egg, sliced onion or a little sesame oil. Many people add stir-fried onion, cabbage or pork to turn it into a fuller meal.
Storage / Bao quan
Keep sealed packs in a cool, dry cupboard away from sunlight and strong odours. Eat immediately once prepared – jjajang noodles thicken and stiffen as they cool.
