How to use / Cach dung

Score the chicken so the marinade reaches the meat, coat it well and refrigerate for at least thirty minutes – several hours or overnight gives a deeper flavour. Cook at high heat so the surface chars slightly while the inside stays juicy; a hot oven, a grill or an air fryer all work. Rest the chicken briefly before serving. Serve with rice, naan or flatbread, a cucumber-yogurt raita, sliced onion and lemon. The marinade also works well on cauliflower, paneer and firm tofu for a vegetarian version.

Storage / Bảo quản

Keep unopened in a cool, dry place. Refrigerate after opening and use within the period on the label. Discard any marinade that has touched raw chicken; set aside a clean portion first if you want extra for basting or serving.
