How to use: Stir a spoonful of the paste into boiling water and taste as you go, adding more until the broth is as strong as you want. Then add prawns, mushrooms, tomato and whatever else you are cooking. Finish with lime juice and fresh herbs off the heat. Adjust the amount rather than following a fixed ratio, since a hot pot broth wants to be lighter than a bowl of soup.
Storage: Keep sealed in a cool, dry place. Refrigerate after opening and use a clean, dry spoon each time.
