Mae Ploy Massaman Curry Paste 400g is a thick Thai curry paste sold in a 400g tub. It is a dense, aromatic concentrate that you fry and then loosen with coconut milk to build a massaman curry, so one tub covers many meals.

How to use: Fry a spoonful or two of the paste in a little oil or thick coconut cream over medium-low heat until fragrant, then add your beef, chicken, tofu or vegetables and stir to coat. Pour in the rest of the coconut milk, add potato and onion if you like, and simmer until tender. Taste and adjust the amount of paste rather than following a fixed ratio. Serve with steamed rice.
Storage: Keep the unopened tub in a cool, dry cupboard away from direct sunlight. After opening, seal the lid tightly and keep it refrigerated, scooping with a clean dry spoon each time.
