How to cook / Cach nau

Simmer your protein – pork ribs, beef, shrimp or fish – in water with onion and tomato until tender. Stir in the tamarind mix, taste and adjust, then add the vegetables in order of cooking time: radish and taro first, then long beans, okra, eggplant, and finally leafy greens such as kangkong or mustard leaves. Serve very hot with steamed rice and a small dish of fish sauce and chilli on the side. The mix works equally well in a Vietnamese-style canh chua with pineapple, tomato, okra and bac ha.
