How to use: Bring water or stock to a simmer, stir in a spoonful or two of paste until it dissolves, then add your shrimp, chicken, mushrooms or vegetables and cook through. Taste and adjust for heat and sourness, and finish with lime and fresh herbs if you like. Stir the tub before scooping, as the paste can separate.
Storage: Keep the unopened tub in a cool, dry cupboard out of direct sunlight. After opening, seal the lid tightly, store it in the fridge and always scoop with a clean, dry spoon.
