Description

Shirakiku Red Beans are dried azuki (adzuki) red beans, the small dark-red bean used across East Asia. They are cooked from dry and are the base for sweet red bean paste, red bean soup, che, mochi and rice cake fillings, as well as for savoury dishes and rice cooked with beans.

How to use: Rinse the beans and pick out any grit. Soak them for several hours or overnight, then drain and simmer in fresh water until tender, topping up the water as needed. Add sugar only after the beans are soft, since sugar added early keeps the skins firm. Use them whole in sweet soups and che, or mash and cook down for a paste.

Storage: Keep the dry beans sealed in a cool, dry place away from moisture and pests. Cooked beans should be refrigerated in a covered container and used within a few days.
