Sichuan Dandan Noodles, Pearl River Bridge Chinese Dried Noodle is a 300g pack of dried Chinese noodles for making dan dan noodles, the well-known Sichuan bowl where the strands are tossed in a thick savoury sauce instead of being served in a lot of broth. Straight and dry in the pack, they cook up springy with a firm bite that carries a heavy sauce without going limp.

How to use: Bring a large pot of water to a rolling boil, add the noodles and stir straight away so they separate, then cook for the time given on the package until tender with a slight bite. Drain well and toss immediately with your sauce and toppings so the strands stay coated. They also work in a hot soup bowl, or rinsed under cold water for a cold noodle dish.
