How to use: To make annatto oil (dau dieu), gently heat the seeds in cooking oil over low heat until the oil turns a deep red-orange, then strain out the seeds – do not let them burn or the oil turns bitter. Use the oil to color sticky rice (xoi gac style), Hue-style noodle soup broth, curries, braised meat and grilled marinades.
Storage: Keep in a cool, dry place away from sunlight. Seal tightly after opening to preserve the natural aroma and color.
