Mae Ploy Panang Curry Paste is a concentrated Thai curry paste for making panang curry, the thick, rich, mildly sweet cousin of red curry. The paste is dense and aromatic, built on chilli and Thai aromatics, and a spoonful is all you need to turn coconut milk into a proper panang sauce. Because it is concentrated, one tub goes a long way in a home kitchen.

How to cook / Cach nau

Heat a few spoonfuls of thick coconut cream in a pan until it starts to separate, then fry the curry paste in it over medium-low heat until deeply fragrant. Add your protein – sliced beef, chicken or tofu – and stir to coat, then pour in the rest of the coconut milk. Season to taste with fish sauce and palm sugar, and finish with kaffir lime leaves and sliced red chilli. Panang is meant to be thicker than a soup curry, so keep the liquid restrained. Serve with steamed jasmine rice.

Storage / Bảo quản

Store unopened in a cool, dry place. After opening, keep the tub tightly sealed in the refrigerator and use a clean, dry spoon each time. For long storage, freeze the paste in small portions or ice cube trays so you can take out exactly what you need.

Ngoài ra có thể dùng để ướp thịt nướng, pha nước chấm hoặc làm sốt trộn mì. Bảo quản: hũ chưa mở để nơi khô mát; đã mở thì đóng kín cất tủ lạnh, luôn dùng thìa sạch khô. Muốn để lâu có thể chia nhỏ ra khay đá rồi cấp đông.
