Wei Chuan Organic Korean Buckwheat Soba is a dried buckwheat noodle in the Korean style, made as fine, straight strands with a muted grey-brown color. Boiled and chilled they are smooth and slippery with a light chew, and their mild grain flavor sits comfortably under cold sauces or clear broths.

How to use: Boil in a generous pot of water, stirring at the start so the strands separate. Cook until just tender, then drain and rinse thoroughly under cold water, working the strands with your hands until they feel clean and cool. Serve in a chilled bowl with sauce or broth, or warm briefly in hot soup.
Storage: Keep the sealed package in a cool, dry cupboard away from sunlight and humidity. Reseal tightly after opening or store the rest in an airtight container.
